We ended up with a surplus of carrots this weekend, due to a grocery run and another delivery from Imperfect Produce. Need to cook a bunch of carrots in a hurry? Throw them in the Instant Pot. Using the ingredients we had on hand, I made a pot of delectable glazed carrots.
Ingredients and instructions below. As always, measurements are inexact.
8-10 medium carrots, sliced into roughly half-inch chunks
3/4 stick of margarine
2-3 Tablespoons of sugar
1/2 – 1 Tablespoon of Tony Chachere’s Creole Seasoning (adjust for personal taste)
1 cup of water
Place all of the above into the Instant Pot. Set the IP to “Manual” for four minutes and set the pressure valve to “sealed.” Afterwards, vent the pressure (or allow pressure to dissipate with cooling), stir, and enjoy.
(Seriously, eat as much as you can before M comes into the kitchen and scarfs it all down.)
What I would do differently:
I’d probably use less water, but I wanted to err on the side of too much water when using a pressure cooker.
